Okay, so I have to share my favorite garden recipe. I have NEVER had a green thumb, but last year I decided that was going to have to change. I discovered a love of gardening that went hand in hand with my love of food. This year, my tomatoes are doing better than ever before. I'm even growing an heirloom variety that I didn't realize I'd planted until they started turning yellow.
Here’s a recipe for fresh garden tomato sauce that is almost too easy to believe. My beloved late friend Lil Diplla taught me to make this. You can even jar it, which I do at the end of summer, but it's great to just make some fresh sauce as a treat for your family on a midsummer night.
Ingredients
6C chopped summer tomatoes – Romas preferably
2T olive oil
2t salt
2T chopped fresh basil
Instructions
Place tomatoes In a dutch oven or stock pot. Drizzle with olive oil and sprinkle with salt. Bring to a boil and let simmer for about an hour or until the tomatoes reduce by half. Use a wooden spoon to mash to tomatoes into a saucy paste.
Add fresh basil and toss with pasta or use to top fresh fish or meats.
